My full name is Daisuke Ikeda, but all of my friends and family call me "Dai".
I created this channel in the Autumn of 2015 with the vision of sharing the various "tips, tricks and techniques" that I've picked up throughout the years of professional cooking from "kappo" style through to "Kaiseki" style of traditional Japanese cuisine🔪🍣🍤🍛🍜🍙
As well sharing the many restaurant recipes that I've learnt in the various kitchens from Tokyo 🇯🇵 to London 🇬🇧, I'll also be sharing with you the many home cooked recipes that I've loved cooking and eating myself at home with my family.
Most importantly, this channel is all about having fun 😃, learning and sharing our experiences and knowledge with one another.

TERIYAKI SAUCE: I remember. 1 part Soy Sauce 1 part Sake (I like ½ Mirin ½ Sake) 1 part Sugar Heat while stirring until sugar dissolves. 👍 P.S. It might've been 2 parts Soy Sauce. Try both quantities to see what you prefer. No biggie.
