The lower engine contributes most of the weight most of the time. Try taking it out then lifting it. If that doesn't work, the next contender would be your fuel tank if it is too full. Then if all else fails take off the saddle bags, they may be overloaded with stuff.
12:57, the caps were probably for slide pins for the caliper. Have to remove the caps then the slidepins. You can also just remove the whole assembly but as you are renovating it is is good to remove caliper slide pins, clean them etc. Also idk about kadets brakes at all but in this video front brake assemly is like this ru-vid.com/video/%D0%B2%D0%B8%D0%B4%D0%B5%D0%BE-Ceu7izqHXfw.html and the pins have to be punched out to change pads etc.
