3:21 I stand corrected... You do have a MIC on... I guess the ECHO of the room made it where it didn't sound like you had a mic on. Sorry.

LOVE this video... Great job... but next time please leave out the BACKGROUND noise/music... it was already hard to hear you speak, since you did not have a MIC on... and then the background music made it even hard to hear you. Thank y'all for sharing this great video...

Thanks for Sharing. My wife and I are doing the same at home for fun and treats for family and friends. It’s so much work. To much work for the money. It’s coming to an end soon.

What brand of enrober are you using? Are you open yet?
@northwestexpressionscookie6329
@northwestexpressionscookie6329 2 года назад
We are using a Hilliard's enrober with a cooling tunnel and a tempering pre-bottomer. We just added a vibratory topping spreader for sprinkling on nuts and other toppings just before the chocolate pieces enter the cooling tunnel. This enrober compliments the three Selmi auto-tempering machines we mainly use for chocolate bars. We are open now, but do not have a retail location. Our products are available online at nwexpressions.com, Amazon and Snackmagic.com. Thanks for your question.

@@northwestexpressionscookie6329 What brand of chocolate do you use? I use Guittard myself for the main lines of chocolates and working on doing bean-to-bar for our specialty bars.
@northwestexpressionscookie6329
@northwestexpressionscookie6329 2 года назад
@@sledmaker02 We also use Guittard exclusively. We have looked into bean--to-bar but the equipment investment and floor space are concerns for us. I'm just not sure if we could produce the volumes we need at a reasonable cost. It would be nice to not have to depend on the chocolate manufacturers since they are having issues filling orders now. Are your specialty bars filled with inclusions?
@sledmaker02
@sledmaker02 2 года назад
@@northwestexpressionscookie6329 I agree with that. Are having trouble getting enough chocolate I sure am from my supplier. I use choco vision to temper my chocolate as well as hand tempering. I am looking at the Perfect brand of continuous tempering.

What are you guys using to separate the popcorn? Where did you get the utensils. Particular the wolverine like utensil?
@northwestexpressionscookie6329
@northwestexpressionscookie6329 2 года назад
Our popcorn popper is mounted on a special table that has small holes in the top surface for the small un-popped kernels to fall through similar to this setup: shop.gmpopcorn.com/collections/popcorn-machines/products/copy-of-high-production-pro-plant-system-twin-kettle-mushroom-popcorn-table) The utensils Bob and Bonnie are using are normally used to handle barbequed meat. We find them helpful to separate the hot popcorn and also to help stretch brittles. These can be found on Amazon.

That’s cool you use a candy cooker to cost the caramel corn. I can’t wait to buy one of those. What brand candy cooker do you recommend?
@northwestexpressionscookie6329
@northwestexpressionscookie6329 3 года назад
The cooker you see in the video is manufactured by Savage Brothers www.savagebros.com/ They also manufactured the copper kettles and the stainless steel water-jacketed cooling table. They make top notch equipment that lasts for decades. We've had the cooker since 1990.

@@northwestexpressionscookie6329 I'm trying to get a quote. Would you mind telling me the price of the gas cooker? Would you buy a used one of just spend the money new? One person 4 hours away is selling one for $350
@northwestexpressionscookie6329
@northwestexpressionscookie6329 3 года назад
@@DanielSchmidt94521 I believe we paid about $1,800 for the cooker back in 1990. $350.00 for a Savage Bros gas cooker sounds like a good deal. I do see a lot of cheap imports on Ebay and other online sites. Keep in mind that they come in two sizes. Ours is a No. 20. The copper kettle is about 19" in diameter at the top. You can get cast iron reducing rings for smaller kettles. I seem to recall the larger copper kettles go for around $1,000.
@northwestexpressionscookie6329
@northwestexpressionscookie6329 3 года назад
Note: The copper kettle in this video is our smaller version (notice the reducing rings on the top surface of the cooker. They nest inside of one another. You would pull these out for a larger kettle
