This salad was absolutely delicious! I made it for my husband and I who are trying to make better healthy choices (I’m pregnant also) and this was SO GOOD and fresh! I recommend everyone to make this and if you make a big batch you can eat it for a few days 🥰
I'm vegan myself. So gave this dish a try. Used green lentils as brown weren't available locally. Anyway absolutely delicious. Makes 5 portions. So really chuffed. Thank you for the recipe.

Thankyou for the recipe. Made my first salad today for my wife and she was thrilled. For the peanuts I added Kafir Lime Peanuts which gave it a zing in flavour. Loved your recipe and the ease of making it.

Love your recipes however I don’t understand this “salting the eggplants” why ? They aren’t bitter at all any more.I think it’s just an old tradition people don’t question ☺️….however otherwise I love your cooking🥰
Very healthy recipe and delicious too. But I had to substitute the spinach and green beans with kale and broccoli respectively as apparently the spinach and green beans are not good for kidney stones.
