Savory chickpea walnut pie recipe for vegetarian and vegan meals for the holidays. This easy chickpeas recipe for a hearty vegetarian pie has a savory pie filling made with chickpeas and walnuts. An easy vegan chickpea recipe to try today.

▶️ PIE RECIPE INGREDIENTS:
100g / 1 Cup Raw Walnuts
100g Sun-Dried Tomatoes (Oil Based) - (1/2 Cup chopped approx.)
2 Teaspoon Paprika
1 Teaspoon Dried Thyme
1 Teaspoon Ground Cumin
1 Teaspoon Ground Coriander
1/2 Teaspoon Ground Black Pepper
1/4 Teaspoon Cayenne Pepper
2 Tablespoon Garlic - Chopped
Salt to taste (I added 1/4 Teaspoon of Pink Himalayan Salt)
2 Cups / 1 Can (540ml) Cooked Chickpeas
130g / 1 cup Onion - chopped
3 to 4 Tablespoon Olive Oil
1 to 3 Tablespoon Water as required - to sprinkle on the cooked filling just to prevent it from getting dry. 👉 DO NOT OVER DO IT OTHERWISE THE FILLING WILL GET SOGGY AND RUIN THE TASTE.
10 Sheets of Phyllo Pastry (available in freezer section of the grocery stores)
Olive Oil to Brush the Pasty
👉 9 Inch Pie Pan or Cake Pan
👉 Non-Stick Pan to cook the filling
▶️ METHOD:
Thaw the phyllo pastry as per package instructions.
👉 CHICKPEA WALNUT FILLING:
Drain 2 cups or 1 can of cooked chickpeas. To a food processor add walnuts, sun-dried tomatoes, paprika, dried thyme, cumin, coriander, black pepper, cayenne pepper, garlic, salt and blend. then add 1 cup of cooked chickpeas, onion and blend to a smooth consistency. Transfer the mixture to a non-stick pan and add olive oil. Fry switching between medium-high, medium and medium-low heat until the mixture is nicely toasted and crumbly. There should be no raw bits left. This is an important step so be patient and take some time to roasting the mixture well to get rid of the raw flavour of the onion and garlic. This process takes about 15 minutes. Once the mixture is roasted, add remainder of the cooked chickpeas and mix well.
👉 ✅ Now add/sprinkle water (OR AS REQUIRED) on the cooked mixture. TURN OFF THE HEAT and then mix. COVER THE LID IMMEDIATELY TO PREVENT THE FILLING FROM DRYING OUT. Adding water to the filling will add back the moisture - needed for better binding. So when you slice the pie the filling will hold well and not get crumbly. Allow it to cool down.
✅ Pre-heat oven to 350 F.
Carefully unroll the thawed phyllo pastry (To prevent the phyllo from drying out while you work, place the sheets in between two clean kitchen towels). On a 9 inch pie pan, layer 10 sheets of phyllo pastry in a STAR PATTERN. Brush each layer with olive oil. Make sure to brush the side with oil as well. Once it's lined, transfer the filling on to the pastry and start to wrap it. Once again brush each layer with oil.
Bake in a pre-heated 350F Oven for 30 to 35 minutes or until golden brown. BAKING TIME MAY VARY DEPENDING ON YOUR OVEN SO ADJUST ACCORDINGLY.
Remove from the oven and allow the pie pan to rest on the cooling rack for 3 to 4 minutes to slightly cool down and then remove the pie from the pan and rest it directly on the cooling rack to cool down.
Cut the pie with a serrated knife and serve with chutney/spicy ketchup for a tea time snack. For a light meal, pair it with a side salad. It re-heats really well in the oven.
✅ TO RE-HEAT: ** Place the pie on a baking tray/pan and place it in the cold oven and then turn on the oven and pre-heat to 350F. When the oven reaches to 350F, then TURN OFF the oven and let the pie sit in the heat for 3 to 4 minutes and then remove from the oven, Serve.
▶️ IMPORTANT TIPS:
👉 Fry the raw mixture switching between medium-high, medium and medium-low heat until the mixture is nicely toasted and crumbly. There should be no raw bits left, so it's really important that you take your time to fry the mixture. It took me about 15 minutes.
👉 Sprinkling water to the cooked filling will add back the moisture - needed for better binding. So when you slice the pie the filling will hold well.
👉 Since the phyllo sheets are so thin, it has a tendency to dry out fast and crack. So you will have to work with it right away, after removing it from the package without delay

I can make that! I make bean and lentil pies all the time. They're filling, yummy, and they make me feel healthy in the mind if not in the body as well. I don't use fancy phylo crust, I just use rolled daily bread dough for the crust. Thank you.

Good idea for Christmas appetizer ❤im gonna make them separate in the tin muffin forms . Ill see when they are cooked because smaller… the oil you can heat up with a little pinch bit of tumeric and pinch bit of dry mint , 5- 10 sec. Let cool down and use. It gives a bright yellow look for the pie. A French chef told me this secret. Gives a nice effect. Also is used to make a color effect for dressing white plates.

So i made it yesterday in the muffin tray. It was 180 *Celsius for 15 minutes, they came out great ! I cut the filo dough in 3 and used 3smaller pieces to make one . They looked like little muffins ! I had with your recepi enough to make 6 “muffin cakes”. My mom made a different filling inspired on yours. She used a little soya mince , the oil tomates , 1/4 union and the chickpeas with 2 garlic, some raisins and pine nuts (instead as for walnuts) , some frech parsely. For the spices she did a little different. 1/2 teaspoon Cinnamon, 1/4 cayenne peper, 1/2 ts cumin, 1/4 ts salt, 1/4 teaspoons ts peper, 1 small teaspoon brown sugar. We used the oil with a bit of tumeric and dry mint (as the chef recommended). Both recepis out great!!! 😊 everyone liked both !

I had a pani puri kit in my pantry. I switched in (from the kit) the dry masala, tamarind sauce & used little dry chickpeas for a garnish. Spooned into the crispy wster balls.A few minutes in a warm oven. Desi Delish!

@@FoodImpromptu Well, I made it. Took it out of the oven and let it cool briefly and tried it. I wasn't that impressed. Thought it was okay, but not exceptional. In the morning, I ate another piece and thought, "not bad." A few minutes later, I had a craving for another bite, and another and another. So, I do really like it. But, as in your video, it must be eaten when it has cooled completely. Thanks. :)

I just discovered you and the filling looks great. As a vegan who strives to include very little oil in my diet, I wonder if there is a way to use phyllo dough without the oil? I've never thought of one. But I could definitely make the filling without oil and use another crust. Thank you, I love the calm presentation.

I'm SO intimidated by phyllo dough... I should really just jump in and try using it. I keep buying sun-dried tomatoes and letting them go bad because I don't know what to do with them. You're my go-to plant-food channel. Do you have any ideas for an SD tomato-forward dish? (He asked hopefully...) 😀 Thank you for such great ideas and fantastic cinematography. Hi Brian! Thank you for your generosity. 😊 You could add sun-dried tomatoes to pasta / pasta salad, make a mixed vegetable dip with it. Add it to your sandwiches, salads and pizza - to name a few. Hope this helps!

Looks great and tasty. But I wonder if all that long frying is necessary - destroying nut nutrients. It gets cooked in the oven. Or maybe add the nuts at the end of frying the onions. Is that why you serve it with salad?

Can you substitute pecans for walnuts? They are just easier to come by. Like on my trees.

I would use a silicone meat Chopper in my frying pan to distribute the product. Easy to get it broken up.

This looks really tasty. I bet the phyllo pastry is fantastic but for the growing numbers of folks like me recently diagnosed with diabetes I’m thinking maybe a sweet potato topping might be nice. Or maybe there is an almond flour or chickpea flour option for the pastry. Sigh… my love affair with wheat flour has come to an end…

Try almond and coconut flour together, then add a little apple cider vinegar after working in the butter/Crisco/coconut oil and the water for the pastry dough. Hopefully that helps. I'm sure there's an actual recipe if you Google it.

10 sheets is too much as I tried a recipe like that one month ago. It does not cook well. I'll try with 5 this time. The filling looks yummy.

Sure you can. Pecans will be a good substitute as well. Note that the end taste will be a slightly different than the original recipe :)

Since all the ingredients, except for the onions, are already cooked when you assemble the filling, can't you just soften the onions and skip the pan-frying of the filling?

Perhaps, because the filling contains the spices which need toasting to bring out their full flavor.

To impart the deep umami flavor of the ingredients searing the mixture with inches the natural sugars and flavor from the beans and nuts that wouldn’t come thru otherwise. The onions are actually “something” to cook the other ingredients with, so that actually cooking happens.
