Thank you, one question. If I want the pasturma to be more tender do I still have to put it under the 10kg weight? Or putting it under weights is only to extract the juices?
@@ghassanco1I have an 8 pound prime ribeye roast I’m super eager to try. Any ideas on how long I should keep in fridge for initial salt log before washing it? Any info would be very appreciated. Thanks : )
@@maxcrit3481 great cut. Two days in the fridge covered with salt. Soak in water for few hours and then press down with something heavy then hang it to dry for one day before you apply the spice mix and hang it for few days in a cool place or in the fridge
