Maybe a drop of milk (northside) or cream (southside) or creme fresh (kildare). Otherwise you done ok my friend.

I don't know about the saugages in Ireland now( ii used to love the Cookstown pork ones back in the 60 s70s Now I'm in NZ and it's very hard to get good pork or beef saugages at a reasonable in price at the present time!
christ almighty, this looked tasty!! my own recipe( maybe it was copied from somewhere) was a combination of mashed spuds, bacon or chunky peices of ham, cabbage and leeks. with a dollop of butter, salt and pepper.
