I like this recipe😁 A little bit salty for my taste so I reduced the oyster sauce, dark soy and salt! The bun was perfect and fluffy. I will using this recipe again! (April 2024)
1g salt seems to make the cake a little too salty. (I used pink himalayan salt) I will try with less next time. I used ready-made puff-pastry and hazelnut instead of pistachio. The texture is spot on - thank you for a really good recipe!

In Hongkong Restaurant, there are 2 kind of steamed bun doughs, one is sweet dough, which using cake flour, lots of sugar, baking powder & yeast; such as steamed lava custard buns etc., the other is normally steamed bun dough, which using all purpose flour, less sugar & no baking powder.
Snowy BBQ pork Bun should be baked by oven which can last for 20-25 minutes in very high temperature , I don’t have any idea about the improvise oven which you mentioned. On the other hand, if you want to adopt steaming method, you should look at other recipe which doesn’t have crispy cookie layer on the surface.
