Carrot and Pea Stew / Worreltjies en Ertjies Bredie with Spekko Parboiled Rice Perfect for the winter season Yum yum good Ingredients 1 kg of lamb pieces 2 large onions peeled and chopped finely 4 tablespoons of vegetable oil 6-8 potatoes peeled and cut into cubes 1 can of garden peas or 2 cups of frozen peas 5 carrots peeled and cut into strips Salt to taste Black pepper -1 tablespoon 1 tsp crushed chilies 3 cloves 1 tablespoon of chopped parsley ( optional) Spekko Parboiled Rice prepared as per packet instructions Method In a large pot heat the oil till very hot and add the meat first , allowing it to brown on all sides , now add the onions , salt , black pepper and cloves .. Cook until onions has browned as well . Now add 1 cup of hot water and lower the heat on medium ... Next cook the meat until almost tender , stirring and adding a cup of hot water when needed ... After about 40 -50 minutes add your carrots and potatoes and two cups of warm Water . Stir well , cook until potatoes are almost tender, at this stage add your peas and cook until potatoes are soft . And its done . Serve with your side of choice i opted for a yummy atchar or beetroot and Spekko Parboiled Rice The 3 cloves are what ultimately gives this dish its very unique and delicious Cape Malay taste . SUGAR BEAN BREDIE /STEW Served with Spekko Saman Extra long grain white rice This recipe was my late moms favorite to make for us as a family and it was also Fatima's favorite dish.. and the last meal I cooked for before her passing May Allah grant her the highest bode in Jannah insha Allah ameen.. Ingredients 500 grams of Sugar beans soaked overnight in water and then cooked until just soft. Put one side and do not strain beans. 2 onions, peeled and finely chopped 1 green pepper chopped 4 tablespoons of oil 3 pimento balls also known as all spice 2 cloves 2 stick cinnamon 1 whole chili 6 garlic cloves, peeled and finely chopped 1 tablespoon of grated ginger 700 grams of blade beef pieces 5 marrow bones or soup bones Salt to taste 2 teaspoons of fine black pepper 2 teaspoons of tomato paste 2 tablespoons of sugar 1 tablespoon of butter Fresh coriander (optional) 2 cups Spekko Saman rice ,prepared as per packet instructions Method In a large pot, heat the oil on high heat. Add the onions, all spice,stick cinnamon, cloves,chili whole, meat and bones. Allow the ingredients to brown well without adding any water... Stirring occasionally. Next add the salt, pepper and garlic,ginger and stir, add a cup of warm water and lower the heat to medium and cook meat until tender adding a little water at a time and stirring when needed. When the meat is tender and all water has cooked away, will take about an hour, add the tomato paste and sugar and stir and fry for about 5 minutes. Next, add the cooked sugar beans with the remaining water it has cooked in, stir and slowly cook for 35 minutes or until the sauce of the stew has thickened. Next add the butter.Making sure to stir when needed. Before serving a few fresh coriander leaves can be added. This meal was served with white rice, Flaky roti or sometimes just white bread with butter and a onion and tomato sambal or atchar. I served it with Spekko white extra long Saman Rice... yummy One of my all time favorites Delicious Please Like And Share
