I just picked this unit up. Was missing the plate to use other brand pellets. Customer service was not easy to deal with. Their instructions are less than stellar. Don’t mention that plate at all and without watching videos would’ve never known. They also don’t mention what the prime button does. Has a completely different first start procedure that doesn’t mention the button at all. Did my first smoke today and noticed if I want to do 250 I need to set the controller temp to 225. The unit kept fairly steady temp during the 4.5 hour cook. Only used about half the hopper.
You nailed it. I'm a Chicago guy and those looked just like they do them here. The most important parts are the Vienna hot dogs, the S. Rosen buns and the neon green relish (I always get it without that, but it is authentic), grilling it just brought it to the next level.

Here in Arizona in a small town we have a Chicago Hotdogs restaurant and they look like the ones that you made only difference is that they add this small point green chilies on them. I wish I'd watched this before I just did a brisket. I had never done one on a pellet and hadn't smoked a brisket in 10 years. I didn't realize how different it is from a stick burner. The outside 2/3s or more was done and the inner, thickest flat was still like 153. I had committed to not wrapped and just tried moving it around to get the center to cook more but just ended up blowing it. The point was fine but the flat was bone dry to undercooked slightly. It was the oddest thing ever. I should have at least boated it to cover the edges. Next time I'll just cook lower or around 275 again & just committ to wrapping.
I’ll never wrap again. They were the best I have ever done. Super tender but firm enough that you see the bite mark. I subbed just for this video. Great job.
