Very good recipe but it would take a lot more than a good dressing to bring me back to Olive Garden which is the worse choice for anyone desiring good quality Italian cuisine.
I followed exactly your pasta recipe and my dough was very sticky then kept sticking as I was cutting it. What a mess lol I guess I did something wrong
I think the intent of this video is awesome. Learning how to make things yourself is key to controlling what goes into your body. Or you can just surrender to Wallmart I guess.😊 Thank you for the video

I am going to try this and I NEVER use Canola Oil. I will substitute Avocado Oil. It doesn't have much of a taste itself and should work fine. I even use it in cake mixes.
Heads up, I used it on high speed as you suggested, and then the pasta ring broke! What kind of noodles are okay to make using that speed? We were making fusilli, and then I checked the manual after, which suggests speed 2-4. So, wanted to share my experience as I took your advice to save potentially working the motor too hard with the slower speed, and then busted the attachment! Maybe it was my recipe? I made egg noodles with the recipe from the manual. Anyways, maybe consider adding a disclaimer incase this happens to anybody else.
The next time I make this though, I will use my food processor to see if it works. When I make spaghetti pasta in my Imperia roller machine, I use the food processor. Used my hands per the video and will also try the food processor.
Purchased the extruder mid summer, tried it using KitchenAid's recipe - not good. Waited and then opted to return it but I missed the window. Found your video's and told myself this looks like it would work. So I made dough yesterday morning, took it out in the afternoon, made my small balls (which really do work better) and fed them into the machine. The larger elbows came out whole, a good shape and maintained their shape. I didn't cook them all and dried them. What I did cook and toss in left over bolognaise sauce, well let me tell you my new best goddess friend, it was very very good. Nice chew and texture. I did add 1 t of kosher salt to my dough, adds flavor for me. This is the way to use this machine. I can't wait to make other shapes. This extruder needs a thick dough. When I was done, nothing stuck to the innards of the machine. Thank you for sharing this recipe and video.
We have an MT347 on the way. Just curious, is it necessary to extend the boom like that and if so, why? Seems like it should be possible to decouple it just supported by the outriggers? Space is at a premium in our pole barns and that just seems like it takes up twice as much room.
I was looking for salad dressing like the Olive Garden ,I came across yours. but you are using the canola oil 😮that’s very inflammatory to the body ,I got a look for a better one
I just bought this and the rollers set on sale at Bed, Bath & Beyond. Used a 20% off coupon and got them really really cheap. Sale is going on right now. I'm watching videos to be informed before I use it. I'm excited to make my own pasta. I want to make some wheat pasta as well as tomato pasta. Thanks for a lovely video.
Excellent timing. I just got mine in today from Amazon and I can’t wait tp use it. I went to several big box stores today and I was shocked at the prices. Much better to start from seed and do your own.
Is there a reason not to beat the eggs first and add about one egg at a time to suffer flour in the Kitchen-aid mixer with paddle, switching to dough hook to form a ball, then knead by hand after the ball is formed?
