Thanks for sharing and I think you taught me something. When I use the charcoal chimney I usually spread out the starter cubes, I see you pile them together. Maybe that's why my charcoal takes so long to light and ash over at the top?
As a man who loves Tabasco - but only has daughters who would never do anything like this with me - i confess im jealous :) good time with the hot sauce and good time with the kids. well done!
I dont mind my ribs/meats being slightly charred but when my dad was at the grill he at times used to put a pot of ice with the top of the pot slightly open on the grill and close the grill to not only bring the temp down but to steam them at the same time. Works every time.
