Assalamu alaikum Hope you're doing fine maria! I made marshmallows a few years back and they were perfect. Jab aap sugar ko cook kren to sugar dissolve honay k baad uss mei spoon/spatula bilkul nahi chalana hota. Ek brush ko paani se wet kr k pan ki sides pe brush kr den 1,2 bar taa k agar koi sugar crystals lagi hon to dissolve ho jayen. Gelatin mai ne rosmor ka use kia tha aur wo bhi liquidy sa hi tha, zyada thick nahi hua tha but final result theek rha. Sugar syrup mei gelatin add kr k mazeed cook nahi krna hota. And yes, beat zyada kren, thick honay tak. Agar stand mixer hai to kaam easy ho jata hai.
