The danger of raw pork is trichinosis. It basically doesn't exist in Japan. Almost all cases of it, the few there are, are due to raw or undercooked bear meat. So she wasn't running much of a risk, really. Not that I'd eat raw pork even in Japan, but I wouldn't be freaking out about it if I somehow accidentally did eat it there.
I watched a sensational discovery channel documentary about a boy who ate a tiny piece of uncooked hamberger bit and fell into coma. I have been scared of uncooked/under cooked meat since and always put my food under nuclear reactor flame until it's well well well done after.
I mean tasting ground meat for salt and spices is fine, one tiny bite is not going to kill you. You can spit it out afterwards if you want to be safe, you don't have to swallow. My mom tastes it every time we make dumplings and she's still alive and never been sick afterwards, so yeah.
You could try frying a lil bit of it in a pan or cooking it for a bit in the microwave to be sure if you wanna check for seasoning without risking anything
