Been using this recipe for carnitas for 4 years now and it never disappoints! Only thing I do differently is sear the pork before slow cooking and end up using bone in since it’s kinda hard to get boneless in my area. Plus I like to think it adds flavor.
Preface: I did not have any lemons, so I used red wine vinegar in this recipe. Other than that, I followed the instructions exactly as written on the website. First comment, the salmon took a LOT longer to reach temperature than the recipe specified. Because of that, the garlic and the sauce burned, and yes, I had the cast iron pan 8 in below the broiler, which in my case is the center rack of the oven. To me, the salmon did not have any garlic or honey flavor. It just tasted like plain bland salmon with pieces of burnt garlic on top from the basting. And finally, whatever reaction occurred in that pan, formed some sort of the stickiest epoxy that you could find in home Depot. I thought I was going to have to call the EPA in to clean it up. It took me forever to get the utensils and the pan clean with some of the hardest scrubbing with my chain link that I've ever done. Now, I don't know if all of these problems and the taste is because I didn't have lemon and had to use red wine vinegar. But based on everything that happened, I am extremely reluctant to try this again even with lemon.
The original Sicilian chicken in Marsala wine: just fried chicken breast coated in flour, toasted allmonds, Marsala wine and little parsley. That is the beauty of this recepie, so simple and it tastes as it seems you have put much effort into it! No mushrooms, onions, garlic and you name it! I just can't understand why you people keep it so complicated all over the YT!
Never ever add salt if you put that much Parmesan. Also if the shrimp look like C’s it’s properly cooked but if they look like O’s like in this video, then they are way overcooked and rubbery. Also, never ever add parsley because it’s going to taste like grass. They missed the lemon zest in the beginning, lemon juice, and the first thing to do is to make a roux(which is butter, flour and then garlic).
