Tried recipe last month , loved it with my cupcakes. What is your advice/ method to refrigerate or put in the freezer for awhile instead of the ice bath ?

I just love how delightfully deranged your videos have become. Great recipe as always and great explanations of the methods. I would like to have seen a clearer shot and explanation of stiff peaks (so many folks don't understand it unless they see it). An upside down bowl does the trick! Love you as always Val! Xxxxx

Does your frosting when it has finally set up for a while get a little crust on it? I'm really after that slight little crunch. My mother always made my cake with an icing just like yours, so I was just wondering if I just leave it out on the table for a few hours if it will get that little magical crunch?
