I know in the DS2 is just theory. But dayum its the best armour Nameless King ever wear if its true. (Its the armour set on the cover and animated trailer)
its interesting you can hear the distorted moans because it kind of implies smough was also still barely alive when ornstein absorbs his soul. the same way ornstein slightly moves his hand in his death cutscene.
I looked through all of his item descriptions and nothing says why he looks that way. Gywn looked like that because he sacrificed himself but I think NK just does because they wanted to show his connection to Gywn visually and they weren't feeling very creative. If you have to justify it in the lore he is extremely old at this point definitely one of the oldest living characters in the base game but we don't see any other characters turn into skulls just because of that sooooo........
They aren't hollowed because they aren't human. Hollowing and the undead curse are just human things. Gywn likely looks like that to reflect his recent past of getting burned to link the fire and his general weakened state. Nameless king probably just looks like that as a reference to Gywn because DS3 is referential to DS1 to a fault.
Fun fact: the voice actor Michael Carter recently acted King Jaehaerys I Targaryen in House of the Dragon, and he's also known as Bib Fortuna in Return of the Jedi.
Gwyndolin, in my opinion, was very wasted in DS3. It would be nice if killing Aldrich would free Gwyndolin's body and be able to interact with him (even if he later died). I could give some interesting dialogues making references to the former glory of Anor Londo, references to DS1's Chosen Undead or something about Yorshka (she deserved to leave that tower, be happy and free). It's a shame.

I get a feeling that there was supposed to be much more to Anor Londo than they showed us. I think there is an occult reason as to why so much of the game was kept hidden, and why so many Secrets can only be found by the debug camera. The area in the back around 2:52 seems so eerily nostalgic to me. I have memories of areas in Anor Londo they don't show you in game at all
