Hi guys,

Welcome to Love Heritage Food!

In this channel, I am cooking with my mum Rosa, learning our traditional recipes and homemade dishes from my beautiful region, Puglia, the South of Italy.
These recipes have been passed through generations, from mother to daughter and son and now I want to pass it to you, along with some secrets tips, so we can learn how to cook them all together every Saturday!!

Is that red-chili a dried one Or fresh one? Also after keeping this in the pantry for one month, can we them refrigerate them Or you don't refrigerate it at all?

Hi there, we use the salt to avoid moisture, it's a protection. In addition it helps the drying process getting rid of the liquids.

Hi TK, thank you for watching my video, unfortunately you would need the natural heat from the sun to dry the tomatoes... Otherwise you can buy dried tomatoes and follow the my instructions for the seasoning 😊

Hi Emelia, thank you for watching my video. You can definately use it in salads and sometimes there are used as an addition for sauces, however, I wouldn't use it to make a tomato sauce. 😊

Hi Angie, sorry for my delayed reply and thank you for watching my video. I would suggest to making sure that the tomatoes are, all well dried, as I show in the video 😊

From many, many teaching videos, MUST be completely DRY before you place tomatoes in jar. It may take 5 - 10 days in the sun 🌞 It all depends on your overall weather, the size, thickness of your tomatoes, etc. I've seen some videos where the person cuts the tomatoes in half, and the weather (heat) there was very, very hot & dry. Like semi-desert.

After 4 days 2 tomatoes had mould on them. I have done them before with no problem. Any ideas 😬

Hi Tony, first of all thank you for watching my video. It's difficult to say, it never happened to me in all these years, it depends on the tomatoes quality, the procedure followed and how you preserve them.

You test them after three weeks if you want ready more fast cut them in strips the size of fry chips The way the video cut slice take more long to ripen
