How to make Pickled eggplants in Olive Oil and preserve them for all winter??
Just follow the instructions in the video and you will have delicious aubergines to enjoy in an aperitif, as a side or in your healthy salads.
Ingredients used:
-4 glass jars of 580ml
-5 kg aubergines
-Salt
-1L - 1.5ml of white vinegar
-garlic cloves
-parsley
-chili pepper
-olive oil

Interesting recipe but the music is too loud - hard to hear the words. No music would bbe more agreeable.

The eggplant skins are not easy to digest but I have seen italian recipes that leave skin on. My mom never did though.

Eggplant with skin on take more long to be ready skin is more tougher to bite no one live skin on

Eggplant skin is bitter. I’ve never had pickled eggplant with the skin on.

Some Italian recipes leave the skin on but it's very rare. Eggplant skins are not easy to digest.

You test them after three weeks if you want ready more fast cut them in strips the size of fry chips The way the video cut slice take more long to ripen
