Nice video, but I have a question. Normally thick ramen noodles are used for mazesoba, but you used udon, so I was wondering if it affects the taste and texture since udon is a little sour and it isnt as starchy as ramen because im planning to use udon too.
I made this & loved your recipe 😋!! Adding a dash of rice vinegar to mix & enjoy simply elevated the udon! The restaurant uses kombu vinegar, but it’s hard to find. Wish I can share photos with you.

Hi, shallot oil is just an oil that infused with shallot after frying with it. You can make it very quickly by just slowly frying the shallot in the oil.
