It’s more for the “experience” I suppose. However, social media has overhyped this place to insane levels. It’s decent ramen but certainly overrated. Can find much much better ramen at a hole in the wall place

It is indeed overhyped and perhaps a bit "gimmicky". There are better mom and pop shops indeed. But... it is a nice and easy introduction to tonkotsu ramen and being able to customize your order with the ordersheet is kind of fun imho.
Aside from soya sauce all i see is cheap but very dry food with no veggies :( Any decent non Michelin chinese restaurant would serve the meal with sauteed pakchoi or any other Green veggie

i tried it at one outlet in plaza singapura (around 2021). the chicken meat was cold, soggy, and a little bloody... the roast pork was also cold and not crispy at all. it tasted like the meat had been sitting there for a long time. First time in my life I couldn't finish a plate of chicken rice. hopefully they have improved since then. Btw it is misleading for the owners to continue to put up signs advertising their brand as "michelin-star" after losing it.
That's probably one reason they lost their Michellin star. Their outlet branches don't have as good quality control as the original stall. At the original stall, everything is cooked fresh and is sold out within 1 to 2 hours, so you get fresh delicious meat.
Most meat is left cold as it is pre cooked and should it be keep warm, the meat will be left overcooked over long period of time. Dont get me wrong that I'm defending them, I used to help my aunt sell cooked food like this. normally what was done is the rice and sauce/gravy is kept hot/warm to balance the food temp without affecting the cooked texture of the meat.
The original and cheapest is in Chinatown Complex. But there are chains that spawned off the original with air conditioning and a slightly higher price all over the country.
