The darkness of your mayo could be fresh farm eggs. The yolks are darker. Store eggs have lighter yolks giving you a lighter mayo.

Use melted coconut oil instead of the bad oils and it was excellent mayonnaise.

The white mayonnaise is made from whatever vinegar you're using. If you're using a white distilled vinegar it'll be a white mayonnaise. I used apple cider vinegar so end up being yellow.

First time I've grown garlic -- didn't know about scapes. The flower heads have gotten very large...will the scapes still be good? Are the seeds in the flower heads edible?

Hi! I was just exploring the internet to figure out what to do with the heads.... I just finished making a "batch" of pesto using.... the whole "stalk" less the head. I did not use any of lower part of the stalks larger than about 3/8" or 4mm, I did cut the stalks about 1/2 to 1 inch long. then (I recommend!) a food processer with sharp steel blade. I added the pile of stalk bits to the processer, to start it was about 1/3 full, and let 'er rip, but it didn't do much, Then I added about a 1/4" cup of olive oil, then it worked! I let it run until there wasn't any "stalky" pieces left. For the next part, I added olive oil when it got to thick. I added about 1/2 cup of sliced almonds, 1/4" cup of Chia seeds (optional), and about 1/2 cup of fine grated parmesan, and 1/3 cup of fine grated Ragano (sp?). Taste your cheeses first, some are salty! If so, add less salt than you might think! Mine was, I added about 1/2 teaspoon of sea salt (grinded) and about the same with pepper, ...not much pepper is needed the scapes have a peppery taste to start with , so be careful. by the time I was done, I had jar full for the fridge, it is best at least overnight in the fridge. it tastes yummy! I am about to sauté' the heads to serve with Risotto and Lemon Pepper Basa. So... I added a about 4 tablespoons of chopped onion, about the same with butter, and threw in the tops. word of note here, it would be better to cut off the green tops from the flowers pods! They were too tough to eat after! when the onions started to turn yellow, I added mushrooms and zucchini, and very little salt. Cooked on medium heat until the onions were translucent and a bit caramelized, the onions were my "timers". It was all very tasty, but we couldn't eat the top sections, it was like tough string or stick! The "flower bulb" (whole) section was very much like eating roast garlic, but not quite as strong in flavor!

@@lynnking2480 I *think* the lemon juice is only for flavor, so in that case, if you like it without the lemon then yes. However, I don’t know the science behind mayonnaise to be honest, lol. It could be that the lemon helps with the emulsion, in which case probably not. I would just try a small batch if I were you and see if it works out without the lemon.

Best foods is the most perfect tasting mayonnaise. All the others taste like Miracle Whip. I DO NOT like Miracle Whip. I'm looking forward to trying this recipe.

@@connieking4167 I’m sorry to hear that! The key is adding the oil in the thinnest, tiniest stream humanly possible while the mixer mixes. Try again! If I can do it, anyone can lol. ❤️

I just found your channel I know it's been a while back but thank you for being down to earth thank you for not being phony thank you for not being perfect I love you love you love you and I will continue to follow you and now I feel so encouraged to make my own marinade because I'm so sick and tired of all these bad chemicals I'm a lab tech several patient has been diagnosed diagnosed with environmental cancer so now I use the yuka app I have scanned every item in the grocery store there's no healthy male whether it's plant-based no healthy salad dressing and a people paying a lot of money for these chemicals once again thank you for your show love it from Canton Georgia

you can eat some of the tougher bottom end if you sautee the heck out of it, but easier to use in broth or soup as you said

Finally someone who loves mayonnaise as much as I do! And I mean I really do. I have breast cancer from the estrogen and from soy, and I actually blamed the mayonnaise for this because I ate it in such large amounts. I laughed and laughed at this girl I'm telling you I would like for her to be my best friend we would really hit it off. Thank you for the wonderful video and I'm going to try your version of mayonnaise. I tried making it a whole lot like what you've done here. extra virgin olive oil and it really was crummy. So I am looking forward to trying the wine vinegar and light olive oil .

Hmmm I’m not sure. Did you do it exactly as I show in this video, including drizzling the oil and an extremely fine line as you are whipping the mixture? That’s the only thing I can think of that would make it not work out (if you didn’t do that), or if you added too much lemon juice or something like that.

Thank you for this… I too have tossed out homemade mayo! I have used the light olive oil, but it thickens the mayo in the fridge. Does anyone have a fix for that?
