After having my daughter, I developed various autoimmune sensitivities and had to change my diet to now be primarily paleo, grain-free and low carb so you will see a mix of healthy grain-free recipes and desserts along with my older authentic Asian meals I grew up making or inspired by my travels.
The best kind of crispy roasted potatoes is smashed. Take the really small yellow potatoes and boil them whole. Let them cool to room temp and then put them on a baking sheet with parchment and some oil. Use a glass or a potato masher to gently press each one until smashed a bit flat. Spray or drizzle oil over top and season (I like salt, smoked paprika and garlic powder. Near the end I sprinkle a little bit of brown sugar so it doesn’t burn. When they’re golden and crispy (about 20 minutes at 400/425 flipping halfway) remove and demolish. No dip necessary but a remoulade or aioli is really nice with it!
You must have "seared" the beef while it was wet as it was steamed and thus gray. You can skip that whole progress unless you are going to take the time to make sure the beef is as dry as possible and seasoned going right onto whatever oil you are using to get a crust.

May also sub with unsalted almond butter OR nut or seed butter of your choice 2/3 cup pure pumpkin puree , not pumpkin pie filling 1/4 cup coconut oil , melted and slightly cooled - use unrefined if you are not a fan of the coconut flavor 1 tsp pure vanilla extract 1 2/3 cups superfine almond flour 3 tbsp coconut flour 1 1/2 tsp baking powder 1 tbsp pumpkin spice (or sub with a your own mix of ground cinnamon + ground ginger + ground nutmeg + ground cloves) 1/8 tsp fine sea salt For the Maple Frosting 8 oz softened dairy-free cream cheese (Kite Hill or Miyokos) , you can use regular if not dairy-free 3 tbsp softened refined coconut oil , can use vegan butter or regular butter if not dairy-free 3-4 tbsp maple syrup , sub with Lakanto sugar-free maple syrup for low carb / keto 2/3 tsp vanilla extract chopped pecans or walnuts for garnish
