I USE BEER, OLD BAY , OR J.O. SEASONING AND PUT A GRATE 2to3" OF WATER. KEEP THEM ABOVE THE BOILING WATER. MMMMGOOD WHERE'S THE BUTTER SAUCE ?

What is the difference between veloute sauce and gravy?

Gravy is done with the pan dripping (Juices) from roasted proteins, roux and stock or water to thin it out. Veloute is thickened stock.

Add broccoli and some water to pan, turn to hight heat, cover and let it steam. Once steaming, add more water, cook for another few minutes while checking for doneness and add butter. Once done, then generously add salt and pepper.

When you mess about with a food processor scooping the veg out and cleaning it all afterwards, I bet it's faster chopping by hand like this. Food processor makes it too small too. I make soffrito for my bolognese sauce and it turns the fried veg into sludge using a food processor. There's also usually a few big pieces the blades didn't catch.

Yes. It also depends if you need about 50 pounds of diced onions. The food processor might start to look awesome at that point.

You could. There will not be as much crunch since the frozen vegetable would be limp to start.

pan steaming has to be my favorite newly learned way of cooking veggies! So easy and perhaps the best way to retain nutrients <3 I loved your pan steamed asparagus video as well!

Looks good but this is not really Steaming, it's more to boiling it as the broccolis is in water! At least change the title.

Cranky blonde chef showed this. I think this is great. It makes onion cutting so simple. My only adjustment is I cut the horizontals first, then the verticals. And, thank you for saying/teaching: "This is not a race!" (That’s how you cut yourself)
