Thanks for posting this! I had always seen videos where chefs finely dice their onions like this, but never explain in detail how they did it. I'll definitely be using this tutorial!
When you mess about with a food processor scooping the veg out and cleaning it all afterwards, I bet it's faster chopping by hand like this. Food processor makes it too small too. I make soffrito for my bolognese sauce and it turns the fried veg into sludge using a food processor. There's also usually a few big pieces the blades didn't catch.
A good tip to save time I learned is to peel the onion after you cut it in half, that way you can see what layer you need to peel down to, grab it and simply take it off, rather than peeling the onion like a potato for 2 minutes
I hate you, Ha Ha. You make it look so easy. I was not doing the horizontal cuts before, so the onion chunks were large. Great video. Sometimes we just need a hint.
Cranky blonde chef showed this. I think this is great. It makes onion cutting so simple. My only adjustment is I cut the horizontals first, then the verticals. And, thank you for saying/teaching: "This is not a race!" (That’s how you cut yourself)
Stop trying to save so much onion. It’s an onion! Also, make your horizontal cut before cutting from above. It makes the onion more stable and safer from cutting yourself.
