I make videos of the Open Source version of Rollercoaster Tycoon, OpenRCT2! I also sometimes play other games, mostly games where you can build stuff, like Parkitect and OpenTTD!
I personally am always a bit disappointed to hear feedback and tips on improving the parks as supposed to showing off the park for what they are. I think the jury, the people That voted are the ones who decided what the park strengths and weaknesses are and I think the results video should be oriented not so much to further explicitly state the possible improvements but rather on the features of the park itself. Anyhow, loved the parks and the contestants did an amazing job as always !
Back in 2004 when I played heavily, I spent most of that year working on a Cedar Point recreation. I used a trainer program to add some custom lighting and a few objects. The first try I used the 3/4 perspective to place the midway. But I ran out of room. So, I restarted using the hypotenuse direction as the midway and it came out much better. The only drawback is that some coaster track pieces were not created to do that angle, so I had to improvise some parts. Otherwise, the coaster layouts were exact. I have all the files on a CDROM from that WinXP PC so someday I hope to try to get it to work and use OpenRCT2.
Do you mean the dancing skeletons, and such? Those were released in the Time Twisters expansion, under mythological theming. You'd just need to purchase it. Also, DK's contest typically don't allow the use custom objects, so unless otherwise specified it can be assumed what is shown is officially available.
Would it be possible to build the track at invalid height, copy paste the station, make usable, and move it to a regular height with the tile inspector?

As always I love the tutorials, and greatly enjoy the new content ... but you mentioned it, so I have to ask, do you have any idea where one can find the custom vehicle that will actually spin?
Funspot was formerly DixieLand And yes the rmc look absolutely out of place, it's a walk on 99.9% of the time and is better than any coaster at six flags over georgia.
