Its great you called out the flaws of the ramen shop, Filipino's doesn't know the authentic Ramen taste, so it might be good for them but in reality it's far from the authentic taste. I hope the shop improves more!

Its a Jun Watanabe food vlog! Maybe the reason why the ramen tastes different is because they had to adjust the taste for the Filipino palate. I mean if i didnt experience authentic Japanese food, for me maybe the taste would be great. But ofcourese would be different if a nihojin would eat? Also another factor is that the taste can be different is the availability of the ingredients. its quality would be totally different from the japanese version. Best example is the eggs. And also the way it is cooked. I know the japanese put their heart and soul with preparing their ramen. Not saying Filipinos dont. But even if the chef has been trained in japan, he would use his own take for the "pinoy " taste. Maybe thats why your finding it hard to look for " japanese style ramen" taste...... Just my two cents
Thattttsss really truueee I agreed totally!! not only localized on purpose, but also accidentally culturally empathy-cally, many mixed reason on that. but after I eat tons of Ramen, I now believe that some of Filipino (not many but gradually increasing) already realized what is real Japan taste. Pinoy taste is not bad for me already after staying here, but I still have to look for REAL taste and my taste on Ramen hahahaha if I bring Japanese food store, it will be EXACTLLY same as Japan taste hahahah
