Thank you for your comment! Failure example 1 is an analogy that it is difficult to remove the dough from the mold using this method, and if the meringue does not have enough volume, it will not rise well. Makes 3 eggs. For the cream cheese, I used cream cheese from Hokkaido, Japan.

This is the first souffle cheesecake recipe I've come across that provides the key (and relatively scientific) points for success, which allowed me to overcome my past failures. For me, the key points were: 1. heating the wet batter up to 70C 2. cool down the batter to 60c before adding the flour 3. The right consistency for meringue (In the past I was always very scared of destroying the meringue should I work too slowly, but you've highlighted that this is a non concern should I have the meringue at the right consistency. 4. I actually baked 2 cheesecakes side by side at the incorrect temperature (160C instead of 120C after the first 15 min blast), so it was evidently a little overbaked, but still gave the amazing texture similar to what I've had in Japan. I cannot wait to try this recipe again at the right temperature. I really appreciate the work you've put into creating this video, I really love the that you're clear/concise/fact driven, unlike most of the other recipe videos where the focus were clearly on the looks with no intention to educate.
