It was 08, we had our after party from my best-friend’s debut. We were so young back then, and a lot of the bars around Malate turned us down because of the age restriction. That was my early exposure of what Malate was and how many people from the community can be themselves, just free and having fun. Fast-forward 4 years later, I became a frequent gimikero, became a Che’lu baby, looking forward to the Annual White Party, and I was able to visit The Bed Malate before they moved to Greenfields, Manda. I had the fondest memory of the people, the sight, sounds, and everything during my Malate days. Bring Back Malate.

I didn’t follow the recipe exactly I added sugar with the wet ingredients and poured the dry ingredients to the wet little by little. And I saw that if you bet well with a bet machine the cake is more moist and still rises. If you do it with a hand mix it’s dry and doesn’t rise and it’s just a biscuit. Honest review. And I under baked it a little.

Malate at that time was THE BEST !!! Penguin Café, Blue Café, The original Café Havana , Episode , Verve room etc. etc. We had street parties every weekend , the first Fete Dela Musique was in Malate as well as the Pride parades. We even partied inside the National Library. THE BEST ♥️
i think same thing is slowly happening in pobla now, back in 2016-2019 it was packed, lots of street vendors and a variety of people, the last time I went there after the pandemic hit, it was a bit empty and to think that it was on a Friday night.. its not like what it used to be.
I was a teenager (18-19) from the province when I first set foot to Malate and I do remember Piggy. Zsa Zsa and Sharon impersonators along with other drag queens invited us to visit them in that bar. I was a closeted queer teenager and Malate was like Disneyland to me. There were so much lights and happy people. I also remember BarGo or something which is the place where we went. I think it was 2002 or 2003. When I relocated in MM back in 2010, I seldom go to Malate with friends and queer bars such as OBar, Chelu, Bed and other "regular" bars were still in place. Even Cowboy Grill was popping then. Aaah, my young queer wide eyed self will always have his heart in Malate.
Filipinos prefer fried rice that is not flavorful, like as basic as a garlic rice because they eat fried rice with another accompanying separate dish (usually with some meat). Actually they even prefer the egg not mixed into the rice but just on the side (the origin of -silog meals). That's why I'm not surprised they didn't prefer the Nasi Goreng like flavor of Gordon Ramsey's fried rice. That fried rice is meant to be eaten alone. There are also versions of flavorful fried rice that Filipinos eat such as the Black Fried Rice (octopus ink) and Sinigang Fried Rice (sour) but they are harder to make, and harder to find anything else to eat it with that blends with the flavor that's why they're uncommon.
Matagal ng hindi nagsusuporta ang goberno sa mga local na products kasi wala silang makuhang pera dyan kung doon sila sa mga imports may mga kickbacks sila sa mga negosyante ilang percent ang makukuha nila every time na mag order sila ng producto...yon ang dahilan na kawawa ang mga local farmers na gumagawa ng mga basic essential gamit sa bahay at kusina...
Exploring the Philippines and focusing on the historical side of every dishes are amazing and makes me want to visit those places and enjoy their food. ❤🎉
