Had a similar experience last year but with my right leg. The recovery time is brutal...so that sucks. But was assured that I would make a full recovery (still ongoing), and I wish the same for you. And also hopefully you get all the support you need. We'll be waiting for you, no pressure, get plenty of rest.
Parboiling the potatoes or whatevs before roasting is not necessary - its a huge waste of time and water. When I cover my potatoes w/ foil in the oven, they get soft quickly. All I have to do after is broil them to get them darkened and crispy.
