I've to say the thing I love the most about Kenji is that he's one of the top culinary experts on this platform, yet he's never titling his videos like "the best" or "the ultimate" "The definitve". Him and Chef John are a true inspiration for every home cook that his passioned about their craft. ♥

Agree. Kenji has a video titled Really Good Beef Stew. It's literally the best beef stew recipe on earth and the techniques completely upped my braising game. I'm going to have to assume that this Really Good Meatloaf recipe is also the absolute best meatloaf on earth

Well he did make "How to Roast the Best Potatoes of Your Life" so you're not completely accurate, but I agree regarding his attitude in general; it's not a competition, there are many ways to excellence, and cooking is about a balance between effort, price, difficulty, taste and many other things so there can never be a "best" version, rather different versions for different circumstances.

My personal low-effort way to prep veggies, especially the carrots, for meatloaf (and also other things, like a pasta sauce, where they don't need to be in a defined shape) is to just use a grater. Nearly as easy to clean as a knife, and I probably have it out anyways for the garlic.

Seeing this really makes me happy for recipes that prioritize weight instead of volume. Half, third, quarter of a tea or table spoon means I'm washing more measuring tools which I can't always double dip into various pots, etc. I much prefer to put my mixing bowl on a scale and toss in ingredients until I reach 3g, 4g, whatever.

First meatloaf I ever did is this one just yesterday: came out absolutely fantastic. With a side of creamy brandy mushrooms. Incredible!

My wife loathes meatloaf because her mom used to make a terrible inedible brick. My mom did as well, but I took that as a challenge to fix the problem. Definitely going to give this a shot.

I grew up with my dad making "meatloaf" that was just ground hamburger, onion pieces the size of a quarter, and ketchup. It's been a lifelong challenge to get over that and want to ever eat meatloaf...

I was a valet at Bohemian grove when I was 17 or 18. Some of the stories are crazy. Women weren't allowed to work in the grove as servers past dark. We had a list of some vehicles that would just get waived through, but I did meet a couple of cool celebs there. Manhattan project was hatched there as well.

Deb and Heidi Swanson helped me learn, adapt, and appreciate a recipe is more than ingredients. They, and others, remain my touchstone steadfast inspirational teachers.

I made this today and it was absolutely delicious! Because I made the mix in advance and put it in the fridge (only adding the veg mix when it was cold of course!) it took longer to cook, but it was so, so good. One of the nicest meatloafs I’ve had! The amount of turkey mince wasn’t mentioned I don’t think, but I used 500g, or just over 1lb of turkey thigh mince. Also, any Brits out there - I used black treacle instead of molasses.

I'm curious to try but I am just iffy on using turkey. Do you think it would also work as beef or is the turkey really worth it?

@@Tinil0 Trust me, I was the same. Anything I ever tried to make with ground turkey came out a dry, crumbly, tasteless mess. But this is so flavourful and simple it’s actually making me rethink beef meatloaf. No, really! It’s ridiculously good. I’m afraid to say my husband and I ate the entire thing in one go because of how tasty it was! I used ground turkey thigh which I think is going to be the best type to use flavour and fat-wise. Try it once! I was so skeptical but now I’m wondering when we can have it again! It’s also definitely the sort of meal I’d cook for company too, for a homey comfort meal. Yum!

This guy is just hands down the coolest ever, on every level. I'm on my 4th read of 'The Food Lab' And plan to keep going in a cycle til I absorb all of it. I'm a good Chef, not a great one, but I have a good idea what I'm talking about. Kenji will forever be one of my heroes.

I've been following Kenji for a very long time, he's even one of the chef's that's inspired me to follow my cooking career. I just tried this recipe, and oh my god...I am not a huge fan of meatloaf, but I had a pound of ground turkey in the freezer, so I tried it. I ate just about half the loaf myself lol It's so good, even though I used Maple Syrup instead of molasses (because my dad's diabetic). I made some roasted garlic and parmesan mashed potatoes and parmesan baked asparagus to go with it!!

OK, here's the deal: I just made this recipe. Used a 1.2 pound package of ground turkey. I followed the recipe exactly. I'm a beef guy all the way but this was excellent! My oven is out of commision so used a cheap countertop oven. It took about 45 minutes. Hit it with a torch for extra carmelization. Wish I could upload the pics. Beautiful! I also seared a couple pcs in a hot skillet for extra texture. Very good either way. Thanks!

Thank you for improving my taste buds lives with every video! I'm somewhat new to keeping a kitchen stocked, I used to eat out for almost all my meals. For those of us grocery shopping challenged, I'd like to suggest a video or article going over what every kitchen should have stocked if they wanted to be able to make most of what you do on this channel. Trying to eat healthy and learn to cook at the same time, it's been fun, but at the same time grocery shopping stresses me out.

I grew up eating my mother’s idea of meatloaf. 1-2 lbs of hamburger in a pyrex loaf pan, covered in a can of Campbell tomato soup. Baked. I had my first “real” meatloaf when in the US Navy. Yum.

For ground turkey, I strictly buy 85% lean, so as to have a fighting chance. It's available in most stores from Shadybrook Farm only in the 3 lb pack, but I found one store that sells the 1 lb pack of the 85%.

I hope after ten episodes or so it is revealed that The Recipe has actually been building a complete meal (meatloaf, mac n cheese, biscuits, green beans, etc). We won't realize it until it is too late. Deb and Kenji will have will have opened a portal between the two worlds. Chaos ensues.

Bratwurst is a great addition to the meat portion of meatloaf. Take it out of the casing or get it in bulk if you can, mix in about 50/50 with your other meat. Country sausage is also a good alternative if you can't get a good, raw bratwurst. Very different flavor, but still a fantastic addition.

@@James-ib5vd typically, 80/20 or 85/15. You can go leaner, but it can make it more tough if you over mix it. Sometimes I'll use leaner beef with plain ground pork, then add the sausage.

The best meatloaf I have ever made was with a lean ground turkey and finely diced mushrooms as the protein. Nobody even knew there were mushrooms in it until I told them but it was so moist they couldn't believe it was lean turkey. Great video as always Kenji, I always get mesmerized watching you prep your veggies.

Just watched the podcast episode, this looks really tasty. I am interested in your meatloaf recipe, particularly the glaze since Deb talked it up so much. Maybe will try to simplify it a bit since it sounds like it had a ton of different ingredients.

For our meatloaf a food processor is required as we add 2 lots of onions one is blitzed to a puree for flavour, moisture, acts as a tenderizer and the other is fine chopped and we use alot. The other vegetables we use the grating disk to process. We also use bulgar as a filler, fine and coarse in milk or stock rather than bread crumbs. We add cumin, coriander, paprika, ground cinnamon,kosher salt, black pepper for spices and seasoning, for the glaze we like thai sweet chilli garlic sauce with a dash of worcestershire sauce. Really i consider our meatloaf a large kofta, especially when sliced and fried so the cut sides are GBD. I find turkey mince a strange choice, as in the uk it costs almost double that of pork and beef mince, is flavourless really and is a pain to creat a decent texture. I'll admit the texture looks good but the price of turkey in our region makes it a poor choice. Thanks for the video, it was interesting and informative, Take care, God bless one and all.

This was great to watch. When we first moved here to NA from the Middle East, one of the foods that blew my mind (in the 'how the hell is this food?' way) was meatloaf! Couldn't even process how inedible it was. And actually haven't had it since high school.

I like meatloaf but I think what makes meatloaf tasty is usually the glaze. Without enough of a glaze, it's just like... wet (or dry) meat w/ stuff. Perhaps trying it with a nice glaze or a gravy would help for you as well? I think one knock off of meatloaf is that it looks awful. I want to experiment with little mini meatloafs/meatballs and treat them more like kofta.

@@nic_rios For your experiment, my mom and I have always portioned ours into muffin tins. They look good, the meat-to-glaze ratio is good, and they're still big enough to reasonably slice for next day sandwiches. (How long they take to cook will probably need some jiggering compared to a full loaf)

Used to work at a butcher shop where we made turkey burgers with chopped red-yellow peppers, added a nice flavour to the burgers without adding too much of a "pepper" taste. Wonder if the same would hold true for this meatloaf?

We make turkey meatloaf with spinach that comes out great every time. I’ve come to prefer it to meatloaf made with beef.

Thanks Kenji. I’m enjoying the podcast. Truth be told I’m a little disappointed it is only every two weeks. I think the problem with every two weeks is that’s just enough time to be “out of sight out of mind.” Just long enough to forget about the show. The world of social media is fast and loose,,,attention span is very short. I was going to get into the controversy of calling it bi-weekly vs bi-monthly,,,lol,,,but that is for a different channel.

I have a question about knives. I don’t have a very expensive one but I did buy a really good sharpener the chefs choice one that is always recommended. But my knife is just a cheap Rachael Ray chefs knife that I got in an old set but the shape of it has kept me using it for years. I feel like it gets dull quickly, does the type of metal matter or do I need to learn how to use a honing rod? It says that you should only need to sharpen your knives a couple times a year but mine gets dull feeling after just a couple uses and could never slice through an onion as easily as yours did.

A bit off-topic, but you were going to do a pepper grinder shootout years ago, and I never did see that come out. I've searched your channel a couple of times, so maybe I just missed it. But if not, I'm definitely still interested in your thoughts on the "best" pepper grinders out there!

Fun seeing you use measuring tools. After following this channel for a while, i started to believe you didn’t own any. Got me thinking, when you are developing a recipe for a book or other platform, will you measure exactly what you write in there, or should i tune into The Recipe to find out?

To avoid cutting your fingers, hold the food with your non dominant hand in a claw-like position. Your fingertips should be angled toward your wrist, and your first knuckle acts as a guide for the knife blade. If the knife slips, your fingertips will be out of the way. Also, counter-intuitively, use a sharp knife and keep it sharp. A sharp knife will grip and cut the food, a dull knife will skitter off the food and slide (especially on things like carrots).

I think where using a food processor saves you time is getting the food to the cooking phase sooner. Since most recipes have some downtime during the cooking phase, you can do the washing then but if you've spent 25-30 mins chopping (most people aren't super quick with a knife) you've pushed when the food is actually finished cooking by that amount of time. Although personally I do absolutely hate washing the food processor parts so I'd likely skip it too.

Does the fat content of the meat make a difference? I use 85% beef/veal/pork mixture, using Erin French’s Dad’s meatloaf recipe, generally similar to the one in this video ( flavorings, binders, meat) and it’s very good, really moist, enough fat that you don’t need to oil the cooking pan.

Would it be weird to poke some holes in the meatloaf with a fork before glazing it? I’ve never used a glaze on a meatloaf, but I just feel like it would soak it up better

Nice recipe! Quick question, what's the advantage to using a toaster oven as opposed to a standard oven? Is there something simple I'm missing?

It’s more efficient (much smaller elements heating a smaller volume of air) and faster to preheat.
