I made this today out of urgency because my husband is craving for Brioche buns😅 I made sure to follow all the recipes and the temperature of milk. Hah. Though my batter is slight sticky unlike yours, my buns still came out perfect!! Thank you for this recipe.
Thanks for the vid. It is not easy to find a good chicken Pho recipe video on youtube. I am going to have to combine techniques from various videos. What I am wondering about yours is, why didn't you add any spices like star anise or cinnamon?
Mainly because that's how I grew up eating it. A lot of the popular chicken pho places around me and my mom don't use spices in theirs. It also is because chicken is a very light and delicate flavor so adding spices masks it. So, I tend to keep it out. However, nothing wrong with adding it!

spring rolls really only keep for 1 day tops. But to store them, i would wrap each one like you normally would, then wrap each one in seran wrap. i only stacked them for youtube purposes, but they do stick if you don't eat them right away. I would not recommend steaming as it will change the texture of it. You could, if they're a bit hard the next day, rub the tiniest bit of water on them to rehydrate the rice paper.

You can do both. I find that it's not necessary with chicken because it doesn't have that much scum. But, if you feel more comfortable washing it first you can.
@@danieldoesfood thanks dan. Salt bath and ginger scrub is supposed to reduce the gaminess. Free range or old hen is best suited for the traditional recipe. I tried farm chicken and it is not as aromatic.

Hey good recipe! Just a note when using stainless - salt can cause pitting so it's recommended to add salt once water's boiling and/or hot enough to dissolve the salt quickly. Adding in before turning on the heat can cause pitting in the metal ane degrade the cooking surface.
Heavy? Like dense? It's hard to say without actually seeing it because it could be several things: yeast is no longer active, not kneaded enough, kneaded too long, didn't proof enough, or any of combo of the aforementioned.
Hi Daniel, is peanut butter really a Vietnamese dipping sauce? When i get these at my favorite Vietnamese restaurant its always served with the hoisin dipping sauce garnished with chopped peanuts and the crispy rolls are servef with Nouc Cham sauce garnished With shreaded carrot But I've never had the peanut dipping sauce Everything looks so delicious 😋🤤 Thank you so much! Here in America, more specifically California, I've seen both just hoisin and hoisin with peanut butter. However, I would say these are more Vietnamese American because in Vietnam you usually only find Nuoc Cham.
edit: peanuts are used a lot in vietnamese dishes and sauces. so peanut butter could be an american adaptation, kinda similar to how some people make panang curry here, usung peanut butter instead of ground peanuts, for example.

to be honest. there isn’t a real, good substitute for fish sauce. With that said, you can get a similar result using a mix of salt and msg or some sort of chicken bullion powder.
