Is there perhaps a substitute for the egg in the mixture? My wife is vegan and I want to make some noodles for her as well. Here in South Africa, the Asian markets do not sell Ramen noodles but dried "pasta" noodles, which are nowhere near Ramen style noodles.
i just made them and they came out so good, thank you, need for practice tho. the rolling it thin was so tiring. also it actually smelled like egg in the beginning before boiling in water so i was worried but it turned out so well thank you. if possible can u also post how to make vegan noodles please !!!

Just steam the eggs in an inch of water. They wont crack and the texture is better. Then shock them in running cold water while cracking them all over on the inside of the pot and then let them soak for a minute in cold water. They come out with a perfect texture whether hard or soft boiled almost like a yolk ginache and the peel damn near falls off.
I first saw Joshua when he made tom ka gai and celebrated 1000 subscribers. Now he's a RU-vid powerhouse. But I feel his 'hero' arc is disappointing. He started so humble, then got cocky (like this ramen video, he really didn't know what he was doing and he pretended like he knew everything), then he got weird... all the papa says and make papa happy and come to papa (which i am so glad he has toned down drastically), and now he's settling into the long haul with challenges, reviews, colabs and other hot-ticket items. I just want the original Josh back. The one who just wanted to share his culinary joy with the world and not caught up in all the fame and nonsense. Perhaps, one day, he will pull a Marco Pierre White and return to his roots of love for his craft. Until that day I wish him well. But what a bowl of turd this ramen (if i can even call it ramen) is. Good on Way of Ramen for being so polite and restrained. I'd have probably got testicular torsion if i had to commentate.
