My wife was diagnosed very recently with breast cancer. She is about halfway through the chemo and doing great. Please tell your friend that the chances of coming out of breast cancer that has not spread past the lymph nodes is incredibly high and that attitude is half the battle. Awesome video as always!!!!

Don't beat yourself up about content or the fact that you haven't been to Japan (my guess is most of your viewers haven't, myself included), but I will say that how critical you are of your results is one of my favorite aspects of this channel. You're learning, like all of us are when watching your videos, and you give us the gift of your mistakes, and an honest reaction to them. Most cooking videos are so positive that you're left assuming it's delicious when in reality they made something you wouldn't feed to your dog. Your critical commitment to good ramen is a boon to us all.

I absolutely relate with your thoughts on the importance of the people judging the food you make. I've spent a lot of time thinking that life was one big cooking competition, but at the end of the day, making the people in your life happy is what truly matters. Speaking of which, loved this video! Any freestyling is always welcome, I loved the stretching of the soup with oat milk, I'm certain that cutting it with dashi will yield great results!

Just want to let you know I love your videos. I have played around with ramen before trying to turn store bought instant ramen into more well rounded meals, but about a year ago your videos inspired me to try making my own noodles and then my own stocks, tares, and toppings from scratch. It has been an amazing journey and changed a lot about how I think about cooking for myself and others. Don't stress about the videos its a crazy time all around the world and we all gotta do what we gotta do. I've never had real Japanese ramen before but the stuff I have made or developed from your recipes are the best soups I have ever had. Cheers!

What you said really resonated with me. I like to make neapolitan pizza and i am very hard on myself and compare it to the stuff i see on youtube. But every time i serve it to my girlfriend she loves it and says it's the best pizza she ever had. Thank you.

Yeah, I am a home cook as well. And sometimes I stress out the same way about my food but as long as my wife and kids love my cooking I am fine with that. So as long as your family and friends like your cooking that's great ok.

Thank you for this recipe! It seems a lot easier than a lot of ramen recipes you’ve posted and I already have most of the ingredients. I especially appreciate the use of the pressure cooker because I don’t have the time to babysit a pot of tonkotsu broth for twelve hours, as delicious as it is. Thank you for an amazing video!

Welcome back! I agree 100% on the ramen snob debate. As long as your food is awesome and you respect where it came from, then you’re good. Like pizza makers from Italy or Naples may not like the New York slice but the US had to use less water and add sugar to accommodate the lower powered electric ovens as coal and wood burning ovens were being phased out. Just wanted to let you know that this certainly isn't the first time your ramen has brought comfort to someone in a rough spot. My friend's father passed away, and he was coming from out of town to visit. He used to live somewhere he could get good ramen, but he had moved away from there a few years back. It's definitely his favorite food, and it brought me such joy to know that I could do a tiny insignificant thing to comfort him by making one of your bowls. You've been a big help to me on my own ramen journey. I watched videos for years but never had the courage to try it myself. As an Indiana boy, I really didn't know what would be good and what wouldn't. Thanks for helping me make the leap, and thanks for helping me bring comfort to my friend in his time of need.

I find your videos just peaceful and instructive to watch. It's just so obvious how much you love making ramen, and it's funny listening to your critique of the end results as it's a lot like how I rip apart my art after I've done it, and everyone around me is like, "What? That's beautiful!!" Your bowls of ramen are an inspiration for so many others to just try it out at home. Thank you for making more of them, and I'm so glad you did take the time for your life that you needed. Funny how you post this not long after I made my own custom batch of tonkotsu ramen. It would have been so amazing had I not accidentally burned one of the bones causing the broth to become ruined. I have my step grandmother and an acquaintance coming over soon and all they can think about is the ramen I'm going to be making for them, so the pressure is high, but I'll get it right this time!

@@WayofRamen Indeed! The weird part was on the first day that I tried it and my friend tried it, it wasn't bad minus a slightly burnt taste. Day 2 after it was chilled, and the broth was awful. Hopefully I can nail the recipe I had originally planned!

I watch most of your stuff, not at all bothered with a break in content. I just wanted to say that the quick breakdowns of why you are doing certain processes (especially in the tare) are super helpful and definitely useful for those of us trying to learn but perhaps not emulate directly. I mostly cook vegetarian at home because my partner is, so hearing you talk about each tare ingredient is super helpful :)

Great video! I love the use of the instant pot, since my kitchen and free time are both small and my ability to spend a whole day making broth just isn't there. It's great you took the time to make a bowl for your friend. Food is a great gift that brings people together, especially when so much love and effort is put into a piece like a finely crafted bowl of ramen.

I dont know how far i went with my ramen journey as well too because I never been in japan and had ramen there too (someday once the whole world is open, ill fly to japan and have ramen there to learn the taste). but Ive been watching your videos and at the same time experimenting some ways to make ramen while following the 5 important elements. its good to see your new video. and I learned alot from you. World class cooking truly. I also want to point out that ramen in Japan isn't necessarily better. Your knowledge and use of a wider variety of ingredients can allow you to surpass anyone at ramen if you wanted to; Perhaps you already have.

If I say something like I learn so much from your video and they are perfect, it is not because that is my expectation of all your video, but it is how I feel after watching your video. To be honest, if you just make a bowl of ramen per week, tell us about the weather, and how the Chasu tastes or having it with your friends/dog/plants/just you is just as good as you teaching us how to make ramen.
