Gaajar ki kheer! Cook rice n carrots in 1/2 cup water on low heat until carrots release their water(6-8 min), add cream n cook until rice n carrots are soft n creamy (1.5 hours) stirring often. Add sugar. Cook another 15 min. Add kewra,cardamom.Serve cold.
In south Asian cooking cinnamon is mostly used to lend a hint of flavour in dishes. However, cinnamon is my favourite in apple pie and I have a recipe for raspberry ricotta cake that has a cinnamon-y ‘crumble’ and I will post that recipe here.
