I made this today and it turned super yummy. I added half the amount of sugar and it was still very sweet and delicious. I also added half gluten free flour and half almond flour. Super easy to make, great texture and delicious. Thank you!! ❤️❤️

So i just made these and they are super easy, and taste really good, almost like in my memories.I never thought I could ever eat eclairs or pate a chou since I was diagnosed gluten intolerant and with a milk allergy.(I used vegan butter) and it works!!!!!!!! Today I made them as profiteroles with home made banana“ice cream“ . Next time I will definitely try some eclair au chocolat . Thank you sooooooo much for this!!!!!!
If your flour blend already has it, you don't have to add extra. But if your flour blend doesn't already contain it, you'll have to add it or your brownies will turn out a crumbly mess...
These were EXACTLY what I wanted, they were fudgy and the taste was amazing. Revisions: I had no cornstarch, uses 2T tapioca starch and added 3/4 cup chocolate chips. A keeper. Thanks so much!
I use my own blend: www.whattheforkfoodblog.com/2016/01/14/nightshade-free-gluten-free-flour-mix/ But you can use Bob's Red Mill 1:1 or King Arthur Measure for Measure. Just omit the xanthan gum in the recipe if you use a flour blend that already has it.
All the breads I've tried in your book are excellent. Thought eating decent quick breads were over but I was wrong. Really enjoy your recipes! Thank you!
If you have a high-powered blender, these will be thick but smooth. You can also process your oats to a fine powder first before you add any other ingredients and that will really help with having a smooth consistency. If you need a thinner smoothie, you can add more liquid as needed.
Mine were also flat, made your flour mix and used the 1/2 teaspoon xanthum gum. I am experienced with making regular flour choux. Followed your recipe, but I felt like the dough was softer than I was expecting. How to fix it?
What is the flour that you are using. I have tried. Different types without much success. There are so many options. I would like if you would give information on what type of flour you were using .Thanks.
