Excellent. I added some torched poblano with the skin removed and roasted the tomatillos instead of boiling, and served it on rice. Really easy and a nice departure from the carnitas I usually make!
Beautiful salad but I have recently cut out all oils. No more oils for me as I cannot lose weight. I will definitely use everything else though. Thank you for the recipe. I will use a vegan dressing with cashews instead of oils.

Ah. The potatoes soak up the marinade which probably has fat, salt, vinegar and flavor enhancers as well as the herbs. So the flavor will soak and penetrate into those thin potato slices. That leaves the chicken to get a little dryer on the top, but probably allows it to still stay juicy on the inside. I wonder if you could get a crust on this from broiling it for like 1 minute after.
