Thank you for your comment. The eggs are not measured by grams, but are made using 8 "medium" size eggs. If I weigh the eggs by grams to match either one, there will be excess yolk or excess white, which would be a waste, so I make it with 8 "M" size eggs. This is just for reference, but when weighing out the grams, I would suggest that you use approximately 160g of yolks and 240g of whites.
