My pop pop says never take a stake out and just put it on the heat. Always Always always salt and refrigerate over night. If you can do it for 2 nights. You will always have soft steak. I don't like red . I have to have well done but not brown . Please please let your meat rest . Stop cutting it right out of the pan/grill/oven. You will lose all your juice and moisture.... He actually burned it a little to much. Use a high heat oil and you won't do that. When you salt and refrigerate for a few days I have never had too use a pan sauce. Just salt and pepper and it is amazing. You can find the petite sirloin with marbled fat.
