Hi! My name is Marwin, and I'm here to share my interpretation of what soul food is and can be. Recipes lean more towards healthy and easy comfort foods with a global fusion twist. Each week I take traditional Southern comfort food dinner recipes and share my spin on them often creating creative fusion dishes that bring in elements of Caribbean and other international cuisines. I highlight new techniques, fresh ingredients, and unique flavor combinations.

This looks good, could you rate your tenderness on this method for preparing oxtails? from 1-10 (1-not tender, 10-fall off the bone)

@@christopherl.2593 I’d say an 8 but that was intentional. I could have cooked it longer wrapped for a 9-10 but I prefer my meat with some texture vs super soft like vegetables

1 lb bag Red Beans 1 Yellow Onion 2 -3 Celery Ribs 3-4 Garlic Cloves 1 Bell Pepper (any color) Fresh Sage Leaves (2-3) Fresh Thyme 1 whole Bay Leaf 2 cups Vegetable Stock 1/2 tbsp Liquid Smoke 1 teaspoon Smoked Paprika 1 teaspoon Sea Salt 1 teaspoon Black Pepper 1/2 teaspoon Garlic Powder 1/2 teaspoon Onion Powder 1/2 teaspoon Ground Sage 1/4 teaspoon Cayenne Pepper Water

Frozen limas were a good choice. Fresher tasting than canned without the cooking time of dried.
