Recipes
Ricotta
32 oz Whole Milk
4 oz Cream
1 oz White Wine Vinegar
Asparagus puree
1 bu Asparagus
2 cloves garlic, sliced
Asparagus stock, enough to puree
15 g cold butter
Pommes
24 oz potatoes
6 oz butter
Cream, enough to make smooth
Mustard sauce
1/4 onion, thinly sliced
2 cloves garlic, thinly sliced
2 oz mustard seeds, divided
Splash of cream
8 oz of cold cubed butter
Anglaise
4 egg yolks
2 oz sugar
3 g cinnamon
4 oz milk
4 oz cream
Souffle
4.4 oz 85% Chocolate
6 egg whites
6 oz sugar
1 oz butter, room temp
1 oz sugar

Criminally underrated channel, keep it up. One unsolicited suggestion that I think would go a long way to improving the quality of your videos to have a more professional feel would better audio. Whether that's a better mic, mixing, recording space or all three.

Thanks, I appreciate it! I'm always open to feedback! Mics are decent, Rode NTG and Shure MV7X, but still learning how to EQ and mix audio, so it is most likely that. I have also have been having horrible allergies all month, so that probably doesn't help.

Man, this is a great service youre providing with this channel. As someone who loves cooking, I love that you make great meals and great food available to everyone regardless of the size of their wallet. Also, more people need to be shooping at Aldi and Lidl! Their selection and quality for the prices they have are ridiculous!

Man this is a great channel! I don't normally comment on videos, but you deserve all the love. As an amateur it would be awesome if you took some more time to explain some more details and maybe add some closeups of these masterpieces. Very nice! I need to try moving the steak around, I’ve never been able to get the consistent crust RU-vid cooks show all the time & I think finally we get the big reveal!

I used it because I had it. It will add a slightly milky flavor and taste better than water, but I wouldn’t go out of the way to make it.

They whey is just a bi-product from making the ricotta. You can just use regular water instead.

Why salt the ice bath ?

You can either heavily season the blanching water (1/4 c salt to 1 gal water), or season both the blanching and shocking water to prevent salt washing away. Both work
