As a professional line cook with 8+ years in the kitchen, i find having knives from a wide range of price points is best. You can have your expensive, hand forged, slicey knife for precision work, a nice mid range for a workhorse. And your inexpensive beater for rough jobs like prepping pounds upon pounds of butternut squash.

The best demonstrable test of sharpness is in the presentation of food. Cut an apple with each knife and set the apples aside. They will age and brown faster with the duller knife and stay fresher longer with the sharper knife. The sharper the knife the longer the display in the window will stay fresh looking.

Besides the performance, I just enjoy using something that is hand made with the pride and mastery that you get from someone like Yu Kurosaki. It’s art and function beautifully executed.

I have two of his knives (a bunka and a sujihiki) and they're just a pleasure to use, so I gravitate towards them so much more than towards the 10 Euro knife that I have also somewhere in my drawer. (It does help that the Kurosakis are hanging on a wooden magnet-bar on the wall above the cutting board, so no need to open a drawer ;)).

Tojiro is a great gift also for friends who have had thicker western knives. Big jump in performance, but more forgiving to new users than some of the other steel options.

Today I ordered a Kurosaki Shizuku 210 mm Gyuto as my first Japanese kitchen knife. Super stoked about this one to arrive!

I believe the Senko line is actually roll forged. Glorious profile on those ones with the fancy Yo handles. Mine came with a Kurosaki edge guard as well.

wanted to say this as well, glad that it was already mentioned.. they just got unlucky to pick one of the senkos for the video.. nonetheless they're amazing knives. I have a Fujin sujihiki and a Raijin bunka and love them both. They're just such a pleasure to use.

Man I love that guitar knife rack. Very informative video also. Vg10 is still a great steel. Takes a very nice edge .

You know i got a santoku knife from mall in just inr 129 which is ruffly around $2 US dollar I love this knife so much Its my first professional big knife love it so much 😮 Sometimes its more about emotions than money In future I will buy a expensive knife too

You don't need expensive knives to get high performance ;). Learning how to sharpen knives, and/or trying carbon steel also works ;)

Many people underestimate the importance of a good knife. I don’t have the very fancy knives, but my Sakai Takayuki’s are good value for money.

There is a law of diminishing returns, I don't think the Kurosaki performed 10 times better than the Tojiro however I have a Tojiro and it performs better than German knives costing as much or even more and even other Japanese brands costing twice as much although the fit and finish won't be quite as good. Also others have the temerity to use my knives without asking (the answer is no btw) , I'd really be annoyed if they used my knife costing $1000.00

Was looking for my first santoku around the 100 dollar price range and considered getting the one from this video but that “Good Design” thing on the handle really put me off getting it and got a Masutani Santoku instead. Is that a sticker or a permanent part of the handle? I keep seeing them some Tojiro’s knives too

Hey, Masutani knives are awesome! It's a sticker you can remove, but a Masutani is still a phenomenal choice.

I had forgotten that it's roll-forged! It's a technique of pressing it through heavy steel rollers to taper the blade.

I am only able to find a miyabi on the country I live. Knife is restricted to be bought from outside the country. I really like the birchwood handle and all but I want to buy it once I get expert in sharpening in a whestone. I just bought cheap ikea VG10 and is sharp cheap but my heart goes to 🇯🇵 knife everytime. Global knives are japanese knives but the full metal design turns me off. Zwilling intercontinental 290 edition is in sale as of now. I might buy it but I am not sure if in the end will regret it instead of the miyabi.

The automatic hammer isn't really changing the process all that much. All it's doing is replacing 3 apprentices with hammers.

I don't really get the price ranges for knives. It seems like I can get a knife for 60 bucks (Tojiro) that cuts 90% as well as a knife that costs 1000 dollars. The extreme cost differential makes no sense at all

For many folks, something along those lines is the way to go! Once you get into the super high end, it's more about the fine details, edge retention, and how much work goes into the knife by hand. Some folks are into that, some folks aren't!
