In the video I mentioned that the last bus may not be practical if you would like to spend a few hours in Bristol, so here are my suggestions for other ways of returning that run later in the day:
You could get a Bridgwater Mendip Explorer bus.
Currently (April 2024) the last bus leaving Bristol for Bridgwater is at 1458, getting into Bridgwater at 1809. From there you could catch a Buses of Somerset bus 21 to Taunton. It would add an extra £2 to your overall fare.
You could get the Megabus Falcon from Bristol. These run 24 hours a day from Bristol City Centre (Bond Street).
They drop off outside of the town centre in Taunton though, at Blackbrook Park Avenue, so depending on the time of day you would need to get another bus in to Taunton town centre or a taxi.
A single ticket booked in advance on the Megabus Falcoln is between £3.99 and £15.40. Tickets are also available on the bus but to guarantee a seat, it is advisable to book.

You could get the train from Bristol Temple Meads to Taunton. Between £13 and £17 single (April 2024)
Personally, I would try to get a National Express bus back to Taunton town centre. There are not many of them, but the tickets are very reasonable, ranging in April 2024 from £7.80 to £8.90 for a single ticket.
