Wet and soft. For so many years, I have not found a more delicious recipe for classic cakes.
I baked half a portion on the video, in the recipe I indicate the whole portion. From the whole portion comes 6 cakes with a diameter of 9 cm .
INGREDIENTS:
Milk - 300 ml.
Flour ~ 1.1 kg.
Eggs - 5 pcs.
Butter - 200 gr.
Sour cream - 200 gr.
Sugar - 300 gr.
Dry yeast - 20 gr.
Vanilla sugar - 2 packs.
Zest of 1 lemon
Raisins - 200 gr.
For fudge:
3 proteins
300 gr. powdered sugar
A little lemon juice
preparation:
In warm milk, add 2 tablespoons of sugar, yeast and 3 tablespoons of flour. Mix, cover and leave in a warm place to approach for 30 minutes. Meanwhile, add sugar, vanilla sugar, sour cream, melted butter at room temperature to the eggs. and mix it well. To the approaching sourdough, add the lemon zest (only the yellow layer), the white is bitter. And pour in the egg mixture. Gradually pour in the flour and knead the sticky dough. The video shows how thick it should be. Cover with a towel and put away in a warm place to approach for 1-1.5 hours. Spread the dough on a table dusted with flour, soak the raisins in boiling water in advance, dry well, lightly sprinkle with flour and put in the middle of the dough. We begin to gently knead the slightly sticky dough, if necessary, sprinkle with flour. We lubricate our hands with vegetable oil and tear off pieces of dough, forming a ball, put it in a mold. Fill out the form by about half. Cover with a towel for half an hour. The dough will rise well. Bake the cakes for 30-35 minutes in a preheated 180 ° C oven. The cooled cakes are smeared with fudge (whipped whites with powdered sugar) and decorated with sprinkles.
