To prepare pickled eggplant and peppers:
Eggplant - 1 kg
Pepper - 1 kg
Dill and parsley - a small bunch
Garlic - 3-6 cloves
Marinade:
Water - 200 g
Salt - 1 tsp
Sugar - 2 tbsp.
Vinegar 9% - 2 tbsp.
1. Cut the eggplant and pepper into slices.
2. Lubricate with vegetable oil and bake for 15-20 minutes at a temperature of 200 degrees. Or you can pan fry.
3. Grind the garlic, finely chop the parsley and dill. Mix.
4. Stir eggplant, pepper, parsley and garlic.
5. Add salt, sugar to the water for the marinade, let it boil. As soon as it boils, remove from heat. Add vinegar. Pour marinade over vegetables, cover. Let cool, refrigerate for 1 day to marinate well. But we already ate in 2-3 hours 😉
