چهارصد گرم گشنیز
پنجاه گرم شنبلیله
یک عدد پیاز درشت
هفت حبه سیر
یک ق م زردچوبه
یک ق م پر رب گوجه‌فرنگی
یک ق چ پودر کاری
یک ق م فلفل قرمز
آب نصف یک بسته تمرهندی
سه لیوان آب جوش
دو ق غ برنج
سه تا چهار ق م از روغنی که ماهی داخلش سرخ شده
:برای ماهی
ماهی
نمک
حدود یک لیوان آرد گندم یا آرد نول
یک ق غ زردچوبه
نصف ق غ ادویه‌ی ترکیبی
خیساندن تمرهندی داخل آب جوش: ۱ ساعت
پخت خورشت: حدود ۲ تا ۳ ساعت روی شعله‌ی خیلی ملایم
سرخ کردن ماهی: حدود ۴۰ تا ۵۰ ثانیه برای هر سمت
خیساندن برنج: به مدت ۱ ساعت داخل نصف لیوان آب
پخت ماهی: حدود ۲۰ تا ۳۰ دقیقه داخل خورشت

1. At first, sprinkle some salt over the fish slices.
2. Put the fish slices aside
3. At the next step, fry the herbs
4. Let the salted fish slices rest
5. Add 400 gr of minced coriander
6. Add 50 gr of minced fenugreek
7. It tastes bitter if you add too much fenugreek
8. The degree of frying depends on you
9. The people of southern Iran fry the herbs until they begin to darken but they don't
burn them
10. The herbs are fried
11. But it shouldn't be burned
12. Now turn off the heat
13. In this step, saute the chopped onion
14. Chop a large onion beforehand
15. Then add the chopped garlic cloves
16. At the same time, add 7 minced garlic cloves
17. After sauteing the onion and garlic mixture, add a dessert spoon of turmeric
18. Stir, then add a dessertspoonful of tomato paste to the mixture
19. After 2 or 3 minutes, add the fried herbs
20. After mixing them, add some curry
21. Add a teaspoon of curry to the mixture
22. Then add a dessertspoon of red pepper
23. The amount of red pepper depends on your taste
24. The traditional Ghalie Mahi is spicy
25. Now it's time to add the tamarind paste
26. You can buy the Thai tamarind paste from the supermarkets
27. Soak half of this kind of tamarind paste in a cup of boiling water
28. After an hour, pass it through a colander
29. Pass it through the colander to remove any fibrous materials and seeds
30. Then add tamarind extract to the mixture
31. The sour taste of tamarind paste makes it more delicious
32. Add 3 cups of boiling water and simmer until the mixture starts to thicken
33. Add another half cup of water because this cup is small
34. Then stir
35. Reduce the heat to low until the mixture begins to thicken
36. Heat for about 2-3 hours maximally
37. But you can normally cook it for one hour and one and a half hours
38. However, some people cook it for 3 hours

40. Now fry the fish slices
41. Add a cup of 000 wheat flour that you can buy it from the supermarkets
42. Add a tablespoon of turmeric
43. Add ½ tablespoon of mixed spice
44. Mix all the ingredients together
45. Don't add salt anymore because the fish slices have been previously salted
46. Coat both sides of fish slices with flour mixture
47. Heat the oil to fry the fish slices
48. They will be cooked in the stew for about 20 to 30 minutes
49. So, fry each side just for 40-50 seconds
50. The fish slices become crispy
51. Flip them over to make both sides crispy
52. So, the fish slices will not lose their form in Ghalieh Mahi
53. Remove from the oil
54. They should become crispy to preserve their shape in Ghalieh Mahi
55. Soak 2 tablespoons of rice in ½ cup of water for 1 hour
56. Drain the rice
57. Pour into a mortar
58. Pound until tender
59. Then add to Ghalieh Mahi
60. Let's do other steps
61. Pound it until a paste-like consistency is reached
62. Add it to Ghalieh Mahi
63. The rice starch makes the stew thicker
64. Mix them until well combined
65. This is an important point for making a delicious Ghalieh Mahi
66. There is another point
67. Add 3-4 dessertspoons of oil that the fish slices were fried in it
68. This oil contains different spices that makes the stew more delicious
69. And also, this oil adds the flavor of fish to the stew

71. Add the fried fish slices to the stew in the last 20 minutes
72. Yum yum! It's time to put the fried fish slices into the stew
73. After about 2 hours and a half on a low heat, add the fried fish slices
74. Press them down slightly
75. Cook for another 20 minutes
76. It will be ready!
77. Yum yum! It's ready!
78. It's time to taste it! If needed add more salt
79. The amount of salt is enough!
80. In this step you can add more salt to the stew
81. pour into a serving dish!
