INGREDIENTS:
* Rice (चावल) - 150 gm
* Urad Dal (उरद दाल) - 50 gm
* Fenugreek Seeds (मेथी दाना) - 1/2 tsp
* Potatoes (आलू) - 2
* Onion (प्याज) - 1
* Ginger, Green Chili (अदरक, हरी मिर्च) - some
* Coriander Leaves (हरा धनिया) - some
* Salt, Red Chili Powder (नमक, लाल मिर्च पाउडर) - some
* Turmeric Powder, Coriander Powder (हल्दी पाउडर, धनिया पाउडर) - some
* Mango Powder (अमचूर पाउडर)- some
* Refined Oil (रिफाइंड तेल) - 1 tbsp
* Asafoetida, Curry Leaves ( हींग, कढ़ी पत्ता) - some
* Urad Dal (उरद दाल) - 1/2 tsp
* Chana Dal (चना दाल) - 1 tsp
* Mustard Seeds (राई) - 1 tsp
* Cottage Cheese (पनीर) - some
* Cashew Nuts, Raisins (काजू, किशमिश) - some
RECIPE:
Take some Rice, Urad Dal and Fenugreek Seeds. Wash the Rice and Dal and grind the Rice then put Urad Dal and Fenugreek Seeds in the same mixer jar and grind the Rice and Dal together and make a fine paste. Add Water while grinding.
Then take out the paste in a bowl. Put some Powdered Sugar, Semolina and Curd in it and mix them. Put some Water also and then keep the Batter aside for some time. After then, filter the Batter with the strainer, put some Salt and Baking Powder in it and mix them well. The Dosa Batter will get ready in this way.
For Filling, put a pan on flame, put some Oil in it and fry the Cashew Nuts, Raisins and Cottage Cheese Cubes in it and then take out some of the Oil.
In the remaining Oil, put some Chana Dal, Urad Dal, Mustard Seeds, Asafoetida and Curry Leaves and turn the flame slow and cook them for a little. Then put some long chopped Onion, Green Chili and Ginger. Then put some Spices like Salt, Red Chili Powder, Turmeric Powder, Coriander Powder and some Mango Powder in it. Mix them well and put some Water in it and then put fried Cashew Nuts, Raisins, Cottage Cheese Cubes and Boiled Potatoes by mashing them with hands. Mix all properly, put some Coriander Leaves and cook it by covering it for 2-3 mins. The Filling for Dosa will get ready.
METHOD - 1: Keep an Iron Tawa on the flame and keep the flame high and grease some Oil on the Tawa and heat it properly. Then turn the flame slow and wipe the Oil with a cloth. This has to be done only once and then put some Water on the Tawa and wipe it with a cloth. Put the Dosa Batter on the Tawa and spread it properly and put some Oil on it then cut it in two halves from the center and make a cone like shape. Serve it with the Filling and Chutneys.
METHOD - 2: Keep a Non Stick Tawa on the flame for heating. Put some Water on it and wipe it with a cloth. Put some Dosa Batter on it and spread it. Then put the Filling on the Dosa and wrap it. Serve it with the Chutneys.
