Aloo ke barule

Ingredients
Baby potatoes
500 gms
Red chilli powder
1 tbsp
Salt
½ tbsp
Coriander & jeera powder
½ tbsp
Turmeric powder
½ tsp
Amchur powder
½ tbsp
Chilli flakes
½ tbsp
Ajwain
½ tsp
Besan
4 tbsp
Cornflour
2 tbsp
Water
as needed
Oil
for deep frying
Chaat masala
½ tbsp
Radish grated
for garnish
Raw mango julienne
for garnish
Green chutney
Coriander
1 cup
Mint leaves
½ cup
Salt
½ tsp
Garlic
5-6 cloves
Green chilli
2 pcs
Roasted jeera powder
1 tsp
Water
as required
Lemon juice
½ tbsp
Method
For chutney:
Add all ingredients in a mixer jar and blend it.
Then add lemon juice, mix it and keep aside.
For Aloo ke Barule:
In a pressure cooker add baby potato, water and pressure cook it for 2-3 whistles.
Once done, strain it and transfer it to a bowl.
Add red chilli powder, turmeric powder, salt, coriander & jeera powder, amchur powder, chilli flakes, ajwain and mix it.
Then add besan, cornflour and mix it.
Sprinkle some water, mix it and make sure each piece has a thin coating.
Heat oil in a pan for deep frying, add baby potatoes one by one and fry them until they get crisp.
Remove it on a plate and let the excess oil drain.
Now, in a bowl add fried barule, green chutney, some chaat masala and mix it.
Plate it on a dish and add grated radish on top.
Our Aligarh ke barule are ready to serve.
