Anda Biryani Recipe
Ingredients:
For the Biryani:
- 4 large eggs
- 2 cups basmati rice
- 2 large onions, thinly sliced
- 2 tomatoes, chopped
- 1 cup plain yogurt
- 2 tablespoons ginger-garlic paste
- 2 green chilies, slit
- 1/4 cup chopped cilantro
- 1/4 cup chopped mint leaves
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon garam masala
- 1/2 teaspoon cumin seeds
- 4-5 cloves
- 2-3 cardamom pods
- 1 bay leaf
- 1 cinnamon stick
- 4 tablespoons ghee or oil
- Salt to taste
- 3-4 cups water (for cooking rice)
For Boiling Eggs
- 4 large eggs
- Water for boiling
- Salt (optional)
*Instructions:*
1. *Boil the Eggs:*
- Place eggs in a pot and cover with water.
- Add a pinch of salt and lemon juice
- Bring to a boil, then reduce heat and simmer for 10 minutes.
- Remove eggs, cool in cold water, peel, and set aside.
2. *Prepare the Rice:*
- Wash the basmati rice thoroughly and soak in water for 30 minutes.
- In a large pot, bring 3-4 cups of water to a boil, add salt and some whole spices (like a bay leaf, cinnamon stick, and cardamom pods).
- Add the soaked rice and cook until it's 70-80% cooked. Drain and set aside.
3. *Prepare the Biryani:*
- Heat ghee or oil in a large pan over medium heat.
- Add cumin seeds, cloves, cardamom pods, bay leaf, and cinnamon stick. Sauté for a minute.
- Add the sliced onions and cook until golden brown.
- Stir in the ginger-garlic paste and green chilies. Sauté for 2 minutes.
- Add chopped tomatoes, turmeric powder, red chili powder, and salt. Cook until tomatoes are soft and oil separates.
- Mix in the yogurt and cook for another 2-3 minutes.
- Add chopped cilantro and mint leaves.
- Gently fold in the boiled eggs, coating them with the spice mixture.
4. *Layer the Biryani:*
- In a large pot, add a layer of partially cooked rice.
- Add a portion of the egg and spice mixture.
- Repeat layers, finishing with a layer of rice on top.
- Sprinkle garam masala over the top layer of rice.
5. *Dum Cooking:*
- Cover the pot with a tight-fitting lid or aluminum foil.
- Cook on low heat (dum) for 20-25 minutes to allow flavors to meld and rice to finish cooking.
6. *Serve:*
- Gently fluff the biryani and serve hot with raita or a side salad.
