It's really very helpful

The idea behind boiling butter Is to seperate last drop of water / moisture from ghee. Second, the should never be refrigerated. I am numbed and truly dumbed

Its simple process of separation assisted by thermal cooling. Next time dont keep it in freezer keep it in freez you will not get ice Also boil this second extract till the time all water goes away before mixing it in first crop. Also if you wash butter before you boil it to make ghee. Then you will not need tgis second step as the material which gets golden brown will b very much less. Its qty goes high if butter wasnt washed. How to wash butter: under running water keep smashing or kneading butter most of it will float as flakes and go away. Butter being sticky will stick together as big lump. Do this till all flakes of nonfatty part goes away from malai and pure fat part of butter stays at end. You have to do tgis till the time water colour is transparent and not milky While boiling as you added lemon ghee will smell good n become bright white in colour If you add pinch of salt you will get crystaline ghee. We also add termeric-leaf for colour n flavour and aroma. Boil tht malai till you get tht material dark charred and no bubbles are formed. At stage you will see bubbles form n just bursts do not stay switch the flame off. It will cook on its own and some fumes of ghee can be seen smelt thts pure ghee can stay 100yrs without regrigeration as well. Courtey: my nani and may be her nani and so on. Sp. Your way of separating ghee from malai is not good. One should churn the malai get butter . This butter should be melted till the sound subsides and pure ghee should be stored after it cools down. This process eliminates moisture 100 percent and the ghee stays with nice aroma even after 6 months 👌
